Our story
Three islands, one table
Simaredo is the acronym for Sicily, Malta and the Dominican Republic. It was born from the true friendship between Salvatore and Marcello, who met by chance in the Caribbean and shared the same dream from the start: to live on a paradise island.
Italians by birth, they rediscovered the real value of friendship between an excellent plate of pasta and a good glass of wine, sharing the pleasure of conviviality in the deepest sense of the word. With a wealth of experience behind them, they decided to pass on to others the value of genuineness and sharing. Because “we are what we eat”.
Two years in, they met Sara, then a customer. She mentioned that her family in Switzerland also runs a restaurant with a slightly different concept, and shared her ambition — despite her young age — to create something of her own. A true synergy grew between the three, and Sara joined the adventure, merging her idea with theirs to give life to ‘Simaredo Ristorante Italiano’.

Salvatore Piccione
“I look back at my childhood in Sicily with happiness. It all started watching my grandmother cook. I remember the passion in her eyes — the same passion I have when I cook to this very day.”
After working in renowned kitchens across Europe, including the best Italian restaurant in Manchester, Salvatore opened his own restaurants in Sicily and in Malta — the best known being T’Anna Mari in Marsaxlokk, frequented by a number of famous personalities. He is also a member of the Mediterranean Tourism Foundation.
In 2022 he fulfilled a childhood dream by opening Simaredo, a seafood restaurant in Punta Cana blending Mediterranean and Caribbean flavours.
